25 whole medjool dates
4 tablespoons smooth peanut butter
Sea salt
150g dark chocolate

1. Slice each date in half length way and remove the pip. Taking care not to open the date the whole way
2. Fill each date with peanut butter
3. Lightly sprinkle each date with a small amount of salt
4. Over a pot of boiling water, gently melt chocolate
5. Carefully roll each date in chocolate and place onto rack
6. Once all dates are coated place rack in fridge for 30 minutes
7. Serve
These dates keep well for up to a week in the fridge.
