Lamb Koftas are a Middle Eastern dish and make great finger food. Easy to make ahead and cook on the BBQ or grill.

Wooden skewers soaked in water for at least 1 hr
500g lamb mince
4 teaspoons of paprika
4 teaspoons of cumin
2 teaspoon of coriander
1 teaspoon of ginger
1/3 cup tahini
1/3 cup water
1 lemon juiced
Pinch of salt
Pinch of sugar

1. In a bowl mix lamb mince, paprika, cumin, coriander and ginger.
2. Divide mixture into 8
3. Shape lamb mince mixture onto end of skewer. The trick is to have the mixture tight and firm. Repeat for all the lamb. Place in fridge for at least 30 minutes to firm up.
4. Whilst the mixture is in fridge make the dressing – mix the tahini, water, lemon juice, salt and sugar in a jar and shake well to combine.
5. Heat grill pan or BBQ
6. Grill skewers of 15 minutes turning regularly or until cooked through.
7. Serve immediately with tahini dressing.
