It is that time of year where fresh peaches are in season, and there is no better way to enjoy them in all their beautiful golden glory.  These can easily be done on the BBQ, or a treat while camping.

ingredients…

4 ripe peaches

2 tablespoon brown sugar

1 teaspoon of cinnamon

3 tablespoons of melted butter

200g mascarpone cheese

100g whipping cream

¼ cup icing sugar

½ teaspoon of vanilla

steps…

1. In a bowl beat together mascarpone, icing sugar and vanilla

2. In a separate bowl beat cream until soft peaks form

3. Gently fold cream into mascarpone mixture

4. Place mascarpone cream into fridge until needed

5. Mix together brown sugar and cinnamon

6. Cut peaches in half and remove pip

7. Brush each half with melted butter and sprinkle with sugar mixture

8. Heat grill pan

9. Place each peach, cut side down into grill pan and reduce heat

10. Grill gently for 10 minutes until charred and just soft

11. Remove and serve immediately with mascarpone cheese
