Summer beckons for light easy salads and this one is both, AND delicious. Enjoy as a light lunch, or take along to a BBQ, or any other ‘bring a plate’ gathering.

ingredients…

4 ripe figs

8 slices of prosciutto

190g of Gorgonzola blue cheese

100g rocket – washed

4 tablespoons of balsamic vinegar

½ cup olive oil

Salt and pepper

20 mins

15 mins

6 as a side serve

steps…

1. Quarter each fig

2. Grill figs for 5 minutes or until just soft and warm

3. Lay prosciutto onto a lined tray and place under grill until crispy – turning over once

4. In a jar mix together balsamic vinegar, olive oil and salt and pepper – shake well

5. In a serving bowl gently mix together rocket, figs, prosciutto and crumbled blue cheese.

6. Drizzle over dressing and mix through.

7. Serve
