Macaroni and cheese is always a favourite with the kids, and a great one to get them involved with in cooking. This dairy free version means that those with dairy intolerances can now enjoy this family favourite too.

1 medium sweet potato
1 medium cauliflower
500ml stock or bone broth
1 brown onion
4 garlic cloves
½ teaspoon turmeric
Salt and pepper
500g pasta
Olive oil, butter or coconut oil

steps…
1. Melt oil or butter in a small sauce pan and fry off onion and garlic until light and transcalent.
2. Add roughly chopped sweet potato and cauliflower and stock.
3. Cover and simmer rapidly until soft and cooked through – approx. 10 minutes.
4. Uncover and allow to cool slightly.
5. Add turmeric and salt and pepper.
6. Puree until smooth and creamy.
7. Cook pasta according to directions.
8. Stir sauce through cooked pasta and transfer to a baking dish.
9. Bake at 180 degrees for 20 minutes.
10. Serve immediately.
