This Crispy Noodle Salad is a quick and easy salad to make. Perfect for BBQs, a light lunch, camping, or host a themed Asian food night and have a bit of fun.

ingredients…

100g fried noodles

2 cups finely shred red cabbage

1 chicken breast – cooked and shredded (can use store brought roast chook if desired)

3 spring onions finely sliced

1 carrot finely sliced

3 tablespoons of Asian salad dressing – I like Pandaroo Vietnamese Salad dressing but whatever your local supermarket has is fine.

steps…

1. In a large serving bowl mix cabbage, spring onion, carrot and chicken. Store in the fridge till ready to serve.

2. At the time of serving mix in noodle and dressing.
